Sourdough Flour Tortillas

Soft, flexible, and full of sourdough flavor, these homemade sourdough tortillas are incredibly easy to make and perfect for pairing with your favorite soups, tacos, wraps, and more!

Makes: 10–12 tortillas
Rest Time: 20–30 minutes
Cook Time: 30–45 seconds per side

Ingredients

  • 250g sourdough starter

  • 160g water

  • 100g avocado oil or olive oil

  • 400g all-purpose flour

  • 10g salt

Instructions

1. Mix the Dough

Add the sourdough starter, water, avocado or olive oil, flour, and salt to the bowl of a stand mixer.

2. Knead

Using the dough hook, knead on the lowest setting for 5 minutes. You can also knead the dough by hand for 5 minutes, until the dough is smooth and cohesive.

3. Rest

Cover the dough and let it rest for 20–30 minutes. This allows the flour to fully hydrate and makes the dough easier to roll.

4. Divide

Divide the dough into 10–12 equal pieces, depending on how large you want your tortillas. Shape each piece into a smooth ball.

5. Roll

On a lightly floured surface, roll each dough ball into a thin, round tortilla. Try to roll them as evenly as possible for consistent cooking.

6. Cook

Heat a cast iron skillet over medium to medium-high heat. Do not add oil.

Place one tortilla in the hot skillet and cook for 30–45 seconds, or until the tortilla begins to bubble and develops light golden-brown spots. Flip and cook the other side for another 30–45 seconds.

Be careful not to overcook them, as this can make the tortillas dry or brittle.

7. Keep Warm

Place the cooked tortillas in a clean kitchen towel or tortilla warmer and cover them while you finish cooking the remaining tortillas. Keeping them covered helps them stay soft and flexible.

Tips for Soft Sourdough Tortillas

  • Don't skip the 20–30 minute resting period. It makes the dough much easier to roll.

  • Roll the tortillas thin for the best texture.

  • Make sure your skillet is hot before adding the dough.

  • Don't overcook them! Remove the tortillas as soon as they bubble and develop light golden-brown spots.

  • Keep cooked tortillas covered with a towel or in a tortilla warmer to help retain their softness.
